MEMPHIS, Tenn. (Youdle) – If you love salmon, you’ll want to know how to keep it fresh and safe. With a little understanding of time and temperature, you can ensure that your delicious salmon dish doesn’t turn into a food safety hazard.

Food safety experts advise that salmon should not sit at room temperature for more than 2 hours. This is the longest that fresh, cooked, or uncooked salmon can remain in the “Temperature Danger Zone” (40°F – 140°F or 4°C – 60°C) before bacteria begin to multiply rapidly. If the room temperature is above 90°F (32°C), this time frame shortens to just 1 hour.

Here's what you need to remember:

  • Keep your salmon refrigerated until you are ready to cook it.

  • Never leave your salmon out for longer than 2 hours (1 hour if room temperature is above 90°F).

  • Being aware of the “Temperature Danger Zone” can help keep you safe from harmful bacteria like Salmonella, Listeria, and E. coli.
